My grandmother's kitchen smelled of mustard oil hitting a hot pan before I ever saw her face in the morning — that sharp, grassy pop that meant mustard greens were about to be tempered with nigella and dried red chilli. Shorshe shaak, she called it, the humble saag of Bengal, cooked down until the water hissed out of it and the leaves went dark and glossy. She would tear the greens by hand, never a knife, saying the cut edge would turn them bitter — a small superstition I only understood later as a kind of tenderness. In winter, when the markets in Kolkata spilled over with kochu, pui, and laal shaak, this was the dish that anchored the plate: plain, cheap, unremarkable, and indispensable. My mother makes it now in a different city, and the smell still pulls me back to a three-burner stove, a steel thali, and a woman humming Rabindra Sangeet while the mustard oil smoked.
